Banana Bread

Caitie has made this banana bread before, but it's so delicious, that when offered the choice of making 'something' with bananas, she immediately requested that we make this banana bread again. I say requested, but really she demanded. "Banana bread! Let's make the banana bread, Mum! Pleeeeeeeease?!"

Caitie's dad was helping this time, and along with the other dry ingredients (2 cups flour, 2 teaspoons baking powder, half a teaspoon of cinnamon and 1 cup brown sugar) he suggested a pinch of nutmeg. Would we be able to taste the difference? He made Caitie smell the difference between the cinnamon and the nutmeg. She didn't particularly fancy either smell!



The wet ingredients (3 bananas, 125g butter, 2 eggs and 1 teaspoon vanilla essence) were mixed seperately and then added to the dry ingredients. Then he taught Caitie how to fold the mixture carefully, advising her that the aim was to add as much air as possible so that the loaf would be light and fluffy. I felt vindicated when she said "Yes, Mummy does that too." He he...



The oven was already at 180 degrees Celsius as we'd been baking earlier, so the mixture went in to a loaf tin and into the oven for 50 minutes.



Mmmmm.... Caitie's dad said he could taste the nutmeg, but without having a side-by-side comparison, I don't think I could. Still delicious though. :) This one is quickly becoming a family favourite...
