Avocado & Cucumber Soup

As a special treat for our dinner guests tonight, we decided to make Gordon Ramsay's Avocado & Cucumber Soup. We figured serving a chilled soup was both easy and impressive! And we were right! :)

We blended 4 peeled cucumbers, 4 ripe avocados, a lot of lite Greek yoghurt (actually way more than the recipe suggested, but it worked!) and some lemon juice. I peeled and sliced the cucumbers, and Caitie was in charge of the blender. :)





We made the soup early and chilled it in the fridge. Then just before we served it, we garnished it with finely diced red onion, tomato, avocado and cucumber tossed in a little lemon juice. We added a touch of lime infused olive oil around the edge (for presentation!) and ground some fresh black pepper and salt over the top.

I didn't get a photo of the finished product unfortunately, but our guests loved it. You only need a very small amount of this soup - it is quite rich. Don't serve in large soup bowls! Caitie didn't try it, as she doesn't like avocados, but it was an interesting addition to her repertoire, and the rest of us really enjoyed it. Caitie's grandma said it was delicious and she'd happily eat 'lots' of it. :P
